Cabbage is a vegetable that not only adds a fresh crunch to your meals but also comes packed with an impressive array of health benefits. Bursting with vitamins C and K, cabbage is a low-calorie powerhouse of nutrients, including fiber, folate, potassium, magnesium, vitamins A and B6, making it a stellar addition to your diet for overall health.

Beyond its rich nutritional profile, cabbage has been recognized for its pivotal role in digestive health. Thanks to its high fiber content, it supports healthy gut function, promoting regularity and contributing to the maintenance of a balanced gut flora.

The best way to enjoy all of these health benefits is to practice safe food handling. First and foremost, always wash your hands with soap and water before handling any food. This helps prevent the spread of bacteria and other harmful contaminants. Additionally, when preparing fruits and vegetables, be sure to thoroughly wash them in cool running water, and remove any wilted or damaged leaves. It's also important to use a separate cutting board for produce, and to keep raw meat and produce separate to avoid cross contamination.

Sweet and sour cabbage

Ingredients:

  • 1/2 head of cabbage (about 4 cups when chopped)
  • 1/2 teaspoon salt
  • 1/2 teaspoon celery seed
  • 2 tablespoons sugar
  • 3 tablespoons vinegar

Instructions:

  • Cut the cabbage in half and rinse it with water.
  • Chop the cabbage into very thin bit-sized slices.
  • In a large bowl, combine ingredients and mix well. Cover.
  • Chill in the fridge for several hours before serving.

Roasted cabbage steaks

Ingredients:

  • 1/2 tsp black pepper
  • 1 head green cabbage
  • 2 tbsp olive oil
  • 1 tbsp salt-free all-purpose seasoning blend (such as Ms. Dash)
  • 1 tbsp fresh dill, chopped

Instructions:

  • Preheat oven to 350° F. Cut cabbage head into six 1" thick slices.
  • Arrange cabbage slices on a baking sheet and drizzle with olive oil. Sprinkle seasoning blend and dill weed over cabbage. Cover with aluminum foil.
  • Bake for 45 minutes. Remove foil and let cabbage steaks brown in oven for 15 minutes longer.
